Green tea is unfermented tea, produced through fixation, rolling, and drying. It retains most of the natural substances in the leaves, especially tea polyphenols and vitamins. The liquor is emerald green or yellowish-green, with a fresh and mellow taste, and a grassy or chestnut-like aroma. Representative varieties include Longjing (Dragon Well) and Biluochun. It is best brewed with water at 80-85℃.
